The Pesto and Truffle sauce is excellent as a condiment for pasta, but also as a fresh sauce! In this recipe Pesto and Truffle accompanies a homemade salada meat, giving a touch of sweetness and flavor to a savory and structured meat.
Preparation
Mix 5 tablespoons of coarse salt and 5 tablespoons of salt up, with about 250 g of caster sugar. Add pink pepper, thyme, rosemary and majorana. [1]
Once the beef fesa from the ribs is cleaned [2], put to marinate the meat be covered with seasonings [3], for at least 6 hours in the fridge [4].
For the accompanying cherry tomatoes: once cut in two, season them with oil, garlic, salt, pepper, majorana and thyme [5]. Then bake them at 180° for about 45 minutes.
Meanwhile remove the meat from the marinade, rinsing it with warm water and drying it on absorbent paper [6].
Cut thin slices of salada meat to serve as flakes, along with Pesto and Truffle sauce [7] [8], some cherry tomatoes still warm and a few basil leaves [9].
